2) Dust accumulation observed on the two vents closest to the window in the dishpit with the 3 compartment sink.
Corrective Action(s): 1) Ensure to clean and sanitize the green racks. Add the permanent racks to the routine cleaning schedule.

- All coolers at 4C or less

- All temperature control units equipped with working thermometers
- Temperature logs for each temperature control units posted on the temperature control unit. Updated and maintained daily.
- Sanitizer pails stocked with 200 ppm QUATs stocked and used as needed
- Large High temp dishwasher had a final rise of 73.2C on dish surface
- Small High temp dishwasher (Pot room) had a final rinse of 74.4C on dish surface
- 3 compartment sink equipped with sink plugs observed in the pot room
- Dry storage maintained in a clean and sanitized manner
- Food items labeled, time stamped, and kept off floor level
- Food items stored in pest proof containers
- Proper cooling and thawing practices observed
- Ice machine and ice scoop maintained in a clean and sanitary manner
