Observation: Burger prep cooler ~ 10 C ambient temperature. No potentially hazardous items kept. Kitchen manager inquired whether small inserts kept on ice is suitable for time being (service technician schedule for tomorrow), this is okay as long as the products are kept < or = 4 C, however, not a long term solution.
Corrective Action(s): Email EHO service invoice.

Comments

Operator contacted EHO to inform that dishwasher had been repaired: high temperature dishwasher booster had overheated causing kick out.
Rinse cycle run twice, 74 C and 72 C plate level respectively, gauge at 85 C --> okay to resume normal warewashing procedures.
For foodsafe and burger prep cooler issues, email EHO invoices.
Thermometers will cooler units will be verified next inspection.
