- General sanitation is good
- All handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All coolers (walk in, display, upright) < or = to 4C
- All freezers (walk in) < or = -18C.
- Temperature log kept on site and up to date.
- Hot holding unit near the front of the deli kitchen for rotisserie chicken at 45C. Hot holding unit outside the kitchen near the display coolers at > or = 60C. The person in charge stated that the turnover period for hot holding chicken is 1.5hr. Once this period has passed, chicken is discarded.
- Three compartment sink available for manual dishwashing. Please follow the proper manual dishwashing procedure: 1) wash 2) rinse 3) sanitize 4) air dry. Quat sanitizer available at 200 ppm solution.
- Surface sanitizer (labeled) was available in spray bottles at 200 ppm Quat solution.
- Dry storage area is satisfactory.
- No signs of pest activity.
- FOODSAFE certified staff on duty.
- Employees wear hair restraints, vinyl gloves, and aprons.
