Observation (CORRECTED DURING INSPECTION): Observed raw meat thawing under the oven. Staff said usual practice is to let it sit there for 4-5 hours
Corrective Action(s): Please note that this is not an appropriate thawing method.
You may thaw foods using the following procedures:
- Cold water bath - changing the water every 30 mins
- Under cold running water
- In a cooler at 4C or below
- Or as a part of the cooking process.

As meat was still frozen, the product was moved into the cooler at time of inspection.

Please note, repeat observations may result in the food being discarded.

New chest freezer to be in place by next routine (to replace the one downstairs without an appropriate lid)

Ice machine still requires some additional cleaning in the basin - be sure to turn off the machine, empty ice and then complete cleaning.

Glasswasher tested at 12.5ppm Iodine
General cleaning and organizing has improved as per the routine inspection
