Observation (CORRECTED DURING INSPECTION): Whisk attachment for floorstanding mixer was observed to have dried-on food residue present in wires and on base.
Corrective Action(s): Cleaned during inspection. Ensure all food debris is removed from dishware during warewashing procedures.

304 - Premises not free of pests [s. 26(a)]
Observation: [Repeat violation]: Significant number of fruit flies observed in kitchen, particularly in area of green waste macerator and in dry storage. Two large blue-backed flies also observed within kitchen.
Corrective Action(s): As listed in violation above, ensure back door is kept closed. Install fruit fly traps and sticky traps by tomorrow (24th February 2018). Ensure professional pest control is brought in immediately if problem does not improve, or worsens. Keep all food tightly wrapped and protected from contamination until issue has abated.

Observation (CORRECTED DURING INSPECTION): [Repeat violation]: Back door to kitchen was again observed to be left open. This has been discussed during several past inspections.
Corrective Action(s): Issue discussed with chef and assistant site manager during inspection. A tightly fitting screen door MUST be installed if staff wish to leave this door open. Note that repeat violations will result in an escalation of enforcement measures being taken.

Observation: Steel-bristle grill brush observed in cooking area.
Corrective Action(s): Remove all steel bristle brushes from premises by tomorrow (24th February 2018). Do not use these on food contact surfaces, as there is a risk associated with detached bristles being accidentally incorporated into food.

Observation: Drain plug for 'wash' sink of 3-compartment sinks is not in working order.
Corrective Action(s): Have plug repaired by Monday (26th February 2018). Call for reinspection once fixed. Note: staff state all dishware fits into dishwasher.

*High-temperature dishwasher reached a final sanitizing rinse temperature of > 71 C at the plate level.

*All cooler and freezer temperatures satisfactory. Thermometers available on/in each unit.
*Temperature records kept up to date.
*Hot holding unit operating at > 60 C.
*Organization of raw/ready-to-eat foods satisfactory.
*Food generally stored off the floor and protected from contamination. Note: ensure cooling pies and other uncovered items in walk-in cooler are wrapped/covered within 2 hours of inspection.
*Best before dates OK on products checked during inspection.
*Juice concentrate cooler operating at or below 4 C.
*Tools and utensils generally stored in clean and sanitary condition.
*Note: minor cleaning is required on top of ovens, and in hard-to-reach corners of the kitchen (e.g. behind/under grills). Ensure these areas are cleaned by next week (2nd March 2018).
*Call for reinspection once drain plug at 3-compartment sink has been repaired.
