Comments

Met with new Kitchen Manager, Robert, and he provided me the following information:

- daily temperature logs are available for hot and cold holding equipment.
- cleaning/sanitation schedules are available and up to date
- PCO is a pest control company
- staff/food handlers are Food Safe trained and at least one person per shift is present
- high temperature dishwasher reached 73C at the final rinse, plate surfaces
- quats used as approved sanitizer and it is measured at 200ppm
- new winter menu is in place
- new walk in freezer door work order is already in place.

Kitchenettes: new professional grade dishwashers are installed ( Miele ) and they are reaching the final rinse temperature at 83C or min. 71C at the plate surface. Daily temperature logs are available for monitoring the temperatures.

Suggestion: provide the sanitizers bottle at the hot holding cards and/or at the kitchenettes.
