Routine inspection of the meat facility conducted. The facility is in good sanitary condition. No violations were noted at this time.

Front
Display cooler 1 & 2 were maintaining meat at less than or equal to 4C (internal temperature).
Walk-in cooler was at 1C (box of creamy salad was probed to obtain internal temperature).
Customer kioske-style freezer was at -15C.
3-compartment sink is equipped with plugs. Dispenser dispenses 200ppm QUATS solution.
Spray bottle contains 200ppm QUATS solution.
Counters sanitized every hour.

Back cutting room & cooler
Cooler holding food at 1C.
Cutting area clean and floors washed.
Clean-in-place methods used to sanitize the area (hose present).
3-compartment sink equipped with plugs.
Dispenser dispenses 200ppm QUATS solution.
Food is stored at least 6" off the ground.

No signs of pests noted at the time of inspection.
Orkin provides monthly pest monitoring services. Tin cats empty.
Handwashing sinks adequately equipped with hot/cold water, liquid soap and disposable paper towels.

Personnel
Staff uses gloves properly.
Hair nets used and handwashing observed.

COVID Safety plan in place. Checklist for sanitation of frequently touched surfaces up to date and regularly monitored.
Markings on the ground for reminding customers about physical distancing.

Keep temperature logs of all coolers and freezers. Must be present for viewing to allow paper temperature monitoring.
