Observation (CORRECTED DURING INSPECTION): Potentially hazardous food (meat / chicken burritos) stored in display cooler at 6C. Cooler was measured at 4C this morning (2 hours ago), but cannot maintain below 4C after usage in the morning. Ambient temperature of cooler elevated to 10C at time of inspection and did not decrease throughout time of inspection (45 min).
Corrective Action(s): Operator instructed to not use cooler until a re-inspection has been conducted. This has not been followed - do not use display cooler. All potentially hazardous foods were placed into stand-up cooler at 4C at time of inspection.

Observation: Ambient temperature of cooler at 10C at time of inspection, and did not decrease even when unused. Although cooler was on defrost cycle, temperature did not lower in a reasonable amount of time (~1 hour) and was still at 10C at the end of the inspection.
Corrective Action(s): Do not use the cooler until it has been adjusted so that it can consistently maintain 4C or lower. Brief periods over 4C are acceptable especially during defrost cycles or periods of heavy usage - however, the cooler is expected to reach below 4C after the lunch rush or defrost cycle.
