*Second Floor Servery: All food items are prepared in the first floor kitchen. Food taken to the second floor - dispensed by cooks. (~ 30 Guests) Quick turnover. All unused food and soiled utensils are returned to the main kitchen for cleaning, disinfection and storage.

- Temperature Control: No concerns noted. Monitoring conducted. ACCURATE TEMPERATURE GAUGES ARE TO BE SECURELY FASTENED, EASILY READABLE, FOR STAFF MONITORING.
- Commercial dishwasher: All food contact surfaces are cleaned and disinfected in the main floor kitchen.
- Wiping cloth storage discussed. Cloths are to be kept stored in a sanitizer, completely submerged, at all times.
- Food Storage: All items are to be stored in covered, food grade containers. Large items are to be stored on lower shelving. No double stacking of food containers are permitted when "saran wrap" is being used to cover food items.
- Sanitary Facility: Ensure single use towels and liquid soap in dispensers are stored at kitchen sink.
- Staff Hygiene: Discussed.
- Pest Control: Monitoring required.
