Observation (CORRECTED DURING INSPECTION): Hand wash station did not have soap again and the sink was blocked with a bowl. Staff member said they were using the bowl to wash potatoes.
Corrective Action(s): The hand wash station is not a food preparation sink. The food preparation sink was uncovered and available for use at time of inspection. Telephone conversation with operator at time of inspection who said he told the staff that the hand sink is not to be used for food preparation and instructed the staff member on duty to obtain soap in a pump style dispenser at time of inspection. This issue was noted on the previous report. Correction order issued at time of inspection.

Comments

Inspection conducted to follow up on outstanding items from the previous routine inspection:
- No potentially hazardous foods were stored at room temperature
- All foods in the dry storage area and walk in cooler were stored off the ground
- Did not noted any reusable wiping cloths on the counters. Staff appear to be using single use paper towels to wipe at this time.
- Still waiting on the corporate sanitation plan re: frequency of sheeter cleaning. At this time operator to ensure it is taken apart and throughly washed/sanitized/air dried at the end of each night until further notice.
- Noted large dough bins beside the warewashing sink. These dough bins do not fit in the sink to be fully submgered. Corporate sanitation plan will be reviewed. At this time, operator to ensure that after one side of the bin is submerged in sanitizer it is turned upside down and the part that was not submerged is left to soak in sanitizer for the required minimum contact time then air dried.
- Steel wool scrubber not available on site.
