Comments

Exhaust hood has been professionally serviced. Pizza cooler has been serviced (condenser) and is now reading at 38F on gauge; foods were at -1 to -2C. Ice shall be used for summer months. Grease trap cover replaced entirely. No food being stored improperly or cooled improperly in the walk-in cooler. Floor drains and all sinks were sprayed down to prevent fly harbourage as well. Discussed that besides spraying, food debris must be removed more frequently. Fan is in place for bar area at night. Plugs are available for beer taps to prevent drippings.
