Observation (CORRECTED DURING INSPECTION): 1. Found large container of teriyaki sauce cooling in the back.
2. Found container of rice cooling for more than 2 hours at room temperature (temperature was 60 C).
Corrective Action(s): 1. Must cool foods in small portions, not large containers. Portion teriyaki sauce into smaller containers to cool quickly.
2. Must cool foods quickly in small portions. Cool from 60 to 20 C in 2 hours, then place in cooler to cool to 4 C in 4 hours.
Use ice baths to help cool foods.

Observation: 1. Hand sink in the back has a broken hot water tap, difficult to get water to turn on and off.
2. Hand sink in the front sushi area has a diminished water flow out of the hot water
Corrective Action(s): 1. Repair tap, so hot water can be easily turned on and off.
2. Ensure there is adequate hot water coming out of all hot water taps.

Observation: 1. Found onions sitting on the floor in the staff washroom.
2. Found open bag of tempura batter sitting on the floor.
Corrective Action(s): 1. Must keep all food off the floor by 6" (corrected).
2. Do not store any foods in the staff washroom. If want to use as addition food storage or food equipment storage will need to remove toilet and seal off sewer line.
3. Opened packages of dry goods must be placed into pest proof containers.

Observation: Found food and grease build up in hard to reach areas under shelving, and equipment, as well as on the ventilation filters and hood, and inside upright coolers.
