5 containers of soup broth stored at room temperature. operator informed me that they are letting soup cool down and then they will be placing soup into refrigerator. no concerns with this practice. Reminded operator that cooling of food at room temp is ok as long as the food is not kept out more than 2 hours. no other concerns at this time.
