Observation (CORRECTED DURING INSPECTION): Bleach solution in wiping cloth bucked prepared at 11:00 am measured 0 ppm chlorine residual. This solution was discarded and fresh solution measured at 200 ppm chlorine was prepared.
Corrective Action(s): - Make new sanitizer solution every 2 - 4 hours

informed that operator will install mounted dispenser.

Sliding door cooler measured at 11C - contained produce and other low risk items. Dairy-based riata transferred to walk-in cooler. Do not store dairy, meat, or other high risk foods in this cooler unless it is repaired and holds food at 4.0C or colder.

Dishwashing and food prep area floors cleaned and free of gross debris.

Sanitation log being maintained, specific sanitation procedures are to be printed out by operator and kept on site.

Food items in walk-in cooler have been covered. Continue to cover food to protect it from contamination.

Ice scoop to be stored nearby ice machine in clean container. Wash scoop and container at the end of each day.

Temperature records for all refrigeration and freezer units are now up to date - good. Accurate thermometers are present in all cooler units.

COVID-19 plan in place. Operator to maintain and post written preventative measures from plan.
