Observation: Samosas inside the display unit were not hot enough at 27C (81F). The ones inside the small toaster oven were 44C (110F).
Correction: Must reheat to 74C prior to putting in display unit and kept at 60C or higher..

Observation: Samosas were stored at danger zone temperature inside a toaster oven with the glass door covered up with tin foil.
Correction: Samosas discarded. Do not sell or reheat unpackaged foods.
Comments

Operator is proposing to sell precooked samosas only. To make application, please submit a floor plan. A three compartment sink and a hand sink is required for food service. However, a two compartment sink will be accepted if food service is limited to reheating and hot holding of samosas only.
Do not start selling samosas until health approval is obtained.
