Observation (CORRECTED DURING INSPECTION): Plastic pushers located in feed tubes of food processor were observed to have food debris. Food processor was stored on clean dish storage rack. Operator stated food processor is no longer being used.
Corrective Action(s): Plastic pushers were washed and sanitized in the dishwasher at time of inspection. Ensure that equipment and utensils that are not being used are either removed from the premises or ensure they are stored in sanitary condition along with other utensils and equipment.

Observation (CORRECTED DURING INSPECTION): 1. A bag of previously opened dry tapioca balls was observed stored in a cupboard along with tools/cleaning products. Cupboard is located under front hand washing sink.
2. Raw shell eggs and raw meats were stored above ready-to-eat foods (cooked shrimp, carrots, etc.)
Corrective Action(s): 1. Bag of tapioca balls removed. Ensure that food is not stored near incompatible items such as tools and cleaning chemicals to protect food from potential contamination.
2. Raw shell eggs and raw meats were relocated by the operator to another location within the walk in cooler so they were not located directly above any ready-to-eat items. Ensure that all raw meats and raw shell eggs are not stored above any ready to eat items to prevent raw foods from dripping onto and potentially contaminating ready-to-eat items below, for which there may be no further cook step to prevent the hazard.

Routine inspection conducted:

- Walk in cooler at 3 degrees C
- Preparation cooler at 4 degrees C (above) and 3 degrees C (below)
- Glass beverage cooler at 4 degrees C
- 2-door kitchen freezer at -6 degrees C. Note: Increased freezer temperature may be due to recently prepared items (spring rolls) placed into freezer at time of inspection.
- 1-door kitchen freezer at -19 degrees C
- Dry storage area freezer at -14 degrees C
- Hot holding internal food temperatures at 60 degrees C or more
- Hand washing stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- High temperature dishwasher measured 75 degrees C at the utensil surface during the final rinse (minimum: 71 degrees C at the utensil surface)
- Bleach water sanitizer available at 100 to 200 ppm chlorine (two labeled spray bottles, container with wiping cloths)
- Ice machine observed to be in sanitary condition. Ice scoop stored in clean dry container outside of machine.
- Scoops stored outside of dry storage food product
- Dry storage area well maintained.
- Personal items stored in designated areas located at back (near mop closet)
- FOODSAFE requirements met at time of inspection. Operator on site during inspection and operator's FOODSAFE certificate expires in 2023.
