Food Safe Level 1 - check your certificate. If certificate is more than 5 years old, Food Safe re-certification is required. Operator must have a valid Food Safe certificate and if absent, at least one person per shift is to have Food Safe. Refresher course can be taken prior to certificate expiry date (www.foodsafe.ca).
Hand washing sinks hav liquid soap and paper towels in dispensers and hot/cold water.
Cooler to store milk is at 4 C / 40 F or colder - good. Check temperatures daily.
Freezers - ok. Gelato and ice cream are all labelled with ingredient information - good.
Scoops are stored in dipper wells with cold running water and are sanitized using bleach.
Wiping cloths are stored in a chlorine sanitizing solution - good.
Gave new poster showing 4 step method: wash, rinse, sanitize, and air dry. Use 1 tsp bleach in 1 litre of water to make a sanitizing solution.
Reviewed cleaning of coffee equipment.
Premises has been cleaned and organized. Walls were recently painted.
