Observation (CORRECTED DURING INSPECTION): Only 1 sink plug was available at the 3 compartment sink. As mention before, in accordance to the 3-compartment wash/rinse/and sanitize method for ware washing, sink plug are required so that each compartment can be filled at the same time and to ensure adequate contact time is achieved.

Observation: Frozen foods in stand up freezers in the front were between -8C to -10C. Similar temperatures were recorded on temperature logs. Frozen foods needs to be kept at a temperature of -18C or below. Repair freezer units.

Comments

Routine inspection conducted and the following were noted:
All cooler units, with the exception of the front cooler unit for hot foods, were less than or equal to 4C and equipped with thermometer. Temperature for hot food cooler units was at 6C. According to temperature log in the morning, the temperature for the unit was at 38F. Food items were moved to a secondary cooler that is in good working order. Continue to monitor cooler unit to ensure it is able to keep foods less than or equal to 4C.
Foods kept in the hot case were at least 60C.
Walk-in freezer at -18C.
All food items properly covered and stored at least 6 inches off the ground.
Hand washing stations in the front service area by the cash register and in the back kitchen were satisfactory.
Quats dispense at 200ppm.
General sanitation was satisfactory
No pest activity noted
