Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation: Pizzas in warming case did not have a timer set
Correction: Timer must be set each time a pizza is put into the case. The reason why FreshSlice is allowed to hot hold pizzas at less than 60C is due to the 2 hour timing. Without the timing system in place, pizzas will not be allowed to be hot held at 35-40C. Please ensure that all pizzas are timed, and discarded if not sold after 2 hours.

All items have been corrected.
According to manager, staff have been instructed that they must wash and sanitize utensils and food contact surfaces every 2 hours, not just at the end of the day.
Pizza timers were in place, thank you.
