302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): All dishware, untentils and equipment have not been properly sanitized due to the dishwasher having 0ppm chlorine.
Corrective Action(s): Everything that has gone through the dishwasher today must be properly sanitized again by submerging in a 100ppm chlorine solution for at least 2 minutes

Discussed with staff - this is to be completed by the end of day. Signage provided for manual warewashing.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Only handsink in the kitchen was blocked at time of inspection by the breading station. There is a sign taped onto the sink by the owner indicating it is not in use. Staff on site at the time were unclear why the sign was there. Both faucets are working however and is supplied with liquid soap and paper towels. Staff have been handwashing at the 3 compartment sink.
Corrective Action(s): All handsinks must be fully functional - that is supplied with hot and cold water, liquid soap and paper towels, and must be ACCESSIBLE at all times. Do not put anything around the basin that would block access.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Chest freezer door has some gaps on the right side of the door when closed. There is heavier ice build up inside the freezer on that side due to the air gap. Temperature inside is still maintained at -18C.
Corrective Action(s): Replace the door seal as necessary to prevent cold air from escaping or hot air from entering to cause ice buildup.

Observation: Low temperature dishwasher had 0ppm chlorine residual after 3 cycles. Maximum wash temperature recorded was 58C.
Corrective Action(s): Service the dishwasher immediately. It must be able to dispense 50-100ppm chlorine residual for sanitizing purposes.
