- All pastries containing potentially hazardous foods (i.e., meat, chicken, vegetables, etc.) are now properly stored at 4C or colder. Operator will not be obtaining a display hot-holding unit. OK as long as pastries containing potentially hazardous foods are refrigerated at 4C or colder.
- Two-compartment sink in side kitchen now designated for food preparation only and is appropriately labelled.
- Leak under large two-compartment sink in baking kitchen has been fixed.
- Area above dishwasher is now labelled as a clean dish area only
- A larger splash guard for the hand sink has been installed - good.
- Reminder to review proper dishwashing procedures with all staff (for both dishwashing and manual washing, if necessary).

*Note: Operator stated they will be purchasing an additional display cooler. OK. Ensure the new display cooler is capable of maintaining temperatures of 4C or colder, and that it is equipped with an accurate thermometer.
