Routine inspection:
Met on site with chef and manager.
With chef, reviewed procedures followed in prep/cook area for ready to eat foods, as well as dishwashing in the three compartment sink at the back, storage in the deli walk in, and storage in the main walk in. Food Safety Plan and Sanitation Plan kept on site. Recipe additions are kept on site.
Manager to keep copies of staff food safety certificates on site. Both chef and assistant have valid food safety courses.
Toured facility with manager and discussed how the first year of operation went. All coolers at 4C or less and freezers at -18C or less. All cold storage units are on a monitoring system. All coolers equipped with thermometers. Cooler temperatures taken and recorded twice daily.
New worker orientation handbooks has been created by Meadow Valley Meats.
Three compartment dishwashing sink at 200ppm quats.
Quats spray bottles for sanitizing at 200ppm.
Bleach water buckets in front serving areas at 200ppm chlorine.
All handsinks fully equipped. Garbage cans available.
