Observation (CORRECTED DURING INSPECTION): 1)The sanitizer bottle did not have any sanitizer in it.
Corrective Action(s): 1) Operator prepared a solution during the inspection. Always refresh the solution daily.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Operator has switched out his commercial dishwasher for a domestic one since the former broke down.
Corrective Action(s): You must replace the domestic dishwasher with a commercial one ASAP. Until then, wash the dishes in the dishwasher then soak in a bleach solution in the sink before air drying as discussed.

Observation: There isn't enough light in the walkway/prep/storage area between the kitchen and the back storage area.
Corrective Action(s): Install another ceiling light in this area.

Observation: 1)Observed operator cutting tuna on cardboard atop the cutting board.
2) Rice was stored in an empty mayo container inside the rice warmer.
Corrective Action(s): 1) Do not use cardboard as a cutting board! Cut/chop all foods directly on the cutting board. Replace the cutting board periodically as required.
2) Do not use old food containers for storing foods. Use proper food grade containers.

Observation: Some mice droppings noted in the back cooler that's being used for storage.
Corrective Action(s): Clean the area using bleach. Monitor for mice.

Observation: Paper towel dispensers at the handsink and washroom are not being used as the dispensers don't match the paper towels in use.
