Observation: Back waste storage area and container strong odor, unlocked door and many flies. Flies noted entering facility through waste channel to waste storage unit on otherside of the wall.
Corrective Action(s): Ensure waste is picked up regularly to prevent heavy accumulation that attract pests. Clean up waste, ensure waste storage container door is closed at all times and continue to monitor for pests.
Find solutions to prevent pest entry into facility through the waste channel in the wall. Operator pulls channel into the building for cleaning and closes hole with cover. Cover must be tight fitting to prevent pest access.

Observation: 1.Tofu machine roller and rolling brushes have notable stains and discoloration.
2. Dry storage area has dry beans and additive spilt in the dry storage container
Corrective Action(s): 1.Ensure all equipment is maintained in sanitary condition or if not possible then replace old soiled equipment.
2. All spills must be cleaned up right away to prevent accumulation and an unsanitary condition.

**Joint inspection with City Licensing Inspector
-Hand wash station fully supplied liquid soap, hot & cold water and paper towel. Fully accessible at entrance to processing area.
- Staff wear aprons, hair nets, boots and gloves in processing area
*Production completed for the day - cleaning in progress during inspection

- Reviewed cleaning and sanitizing procedures of processing machines:
1) Cleaning & sanitizing methods for the equipment
-pre-soak in the soda water
-wash & sanitize at the hot water bath : >= 85 C
2) Cleaning & sanitizing methods for the machinery
-Run hot water (>= 85 C) for 10 min
-run soda water (caustic soda) for 5 min
-run hot water again

-Sanitizer noted 200 ppm QUATS
-Walk in cooler noted 2 C. Appears to maintained in sanitary condition. All food is covered, organized and stored at least 6 inches off the ground.
-Storage practices for dry foods ( soy bean bags, spices, additives) are on pallets or at least 6 inch off the ground. Container storage units appear organized with satisfactory ventilation. Food stored separate from labels, containers and spare equipment.
-Deep fryer oil maintained and discarded in sanitary manner.
-During cleaning and cooling large amounts of water is pooled on the ground and then directed to large floor drains.
-Pest control reports will be emailed to EHO
-Hood fan appears to be maintained in sanitary condition
