Observation: Bait boxes supplied by the pest control company are of the wrong type as mice can consume the poison then leave the box. Poison can potentially be tracked onto food contact surfaces.
Corrective Action(s): Have the pest control company remove and install traps containing poison that mice can enter but they cannot leave.

Observation: Very large number of rodent droppings still observed throughout the back of the premises. Live mouse observed in the food storage room. Pest control company has been hired. Traps observed in place
Corrective Action(s): Pest control operator needs to come on site every week to access. 2 weeks is too long due to the severity of the infestation.
Install weather stripping on the base of all doors as disussed.
Install a door to the Gelato room and ensure weather stripping is installed at the base of this door.
Install more glue boards and traps
Discard any opened bags containing food/beverage containers in the storage area
Discard any food item that has been opened and is still on the shelves
Remove clutter from back room area as some of this material has been observed to have been chewed any may be used as nesting material by the mice.

Observation: Opening observed at the base of the sliding door at the back of the premises which will allow pest entry

Corrective Action(s): Remove all the droppings, Pull all items off the shelves to remove the droppings. Ensure bleach is used to sanitize all contact areas.
