Observation (CORRECTED DURING INSPECTION): Butcher knife was found stored between a prep cooler and prep table.
Corrective Action(s): Ensure knives are stored in a sanitary manner to prevent potential cross contamination. Knife was relocated at the time of inspection.

Observation: Frozen meat was stored in previous used plastic bags.
Corrective Action(s): Plastic bags cannot be properly cleaned and sanitized and are intended for single use. Do not used plastic bags which were previous used to stored foods.

Observation: Grease/food accumulation was found under the prep cooler area.
Corrective Action(s): Ensure facility is cleaned on a regular basis and is maintained in a clean and sanitary condition to prevent potential attraction of pests.

Comments

-Walk-in cooler was at 3C.
-Prep cooler was at 4C (top and bottom).
-Service area cooler was at 4C.
-Upright freezers were at -18C.
-Chest freezer was at -20C.
-Hot holding was greater than 60C.
-Pork was cooked to greater than 71C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Bleach sanitizer pail was at 100ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General food storage practices good at the time of inspection. Raw meats stored below ready-to-eat foods.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until August 5, 2023.
