Observation: Quats sanitizer used throughout foods service and and area. Measured spray bottles and growler refill tube reservoir. All measured above 400 ppm. Shoud be 200 ppm. Product auto diluted and dispensed from main source.
Corrective Action(s): Service main dispenser such that the concentration of sanitizer being dispensed is reduced to around 200 ppm

Comments

- Growler re-fill program in place. Growler filling tube (only common contact between dispenser and growler) is sanitized by soaking in sanitol solution. A written set of procedures outlining the steps for this service (refilling growlers) is needed. Please get this completed within 30 days.
- Cooling unit less than 4 C. Recommend keeping temp logs for prep cooler.
- Dishwashers in kitchen and bar working OK. Plate temps above 71 C.
- Production side looks good. No comments at this point.
** Develop a plan to improve storage of food in main keg cooler OR add another cooler dedicated to food service side of business. More shelves are needed (get them on wheels).
