Observation: Cutting board used for vegetable prep was observed to have deep cut marks through out the board.
Corrective action: Replace the cutting board with a cutting board that is smooth, non-porous and easy to clean.
Health rationale: Food contact surfaces must be smooth, non-porous and easy to clean and sanitize to reduce pathogen growth and/or toxin production.

Observation: Fruit flies were observed in the prep area and front service area. Pest control company is contacted.
Corrective actions: 1. Increase the frequency of the pest control company visits. 2. Request recommendations form the pest control program. 3. Clean and sanitize food surface contacts on a frequent and regular basis.
Health rationale: Fruit flies may contaminate food and food contact surfaces.

Comments

Routine inspection conducted. The following observations were noted.
1. Temperatures
Walk-in cooler at 4C.(Internal temperature of turkey slices at 4C).
Walk-in freezer at -18C.
Front under counter coolers at 3.8C.
Display cooler at 4C
Sandwich cooler at 4C.
Hot holding items at greater than 60C (internal temperature of soup at 84.6C).
Temperature logs are maintained and up to date.
2. Sanitation
All handwashing stations are accessible and equipped with hot and cold running water, liquid soap and paper towels.
3 compartment sink with drain plugs available.
QUATs sanitizer from the dispenser at 200ppm
QUATs in spray bottles and pail at 200ppm.
In-use knives are stored in ice-water bath which is changed after every 3 hours or when water becomes dirty (prior to 3 hours).
Prep sink is equipped with hot and cold running water.
3. Storage
All food items are stored above ground at least 6 inches.
Food items are covered and labeled.
Personal items are stored separately.
4. Pest activity
Pest control program in place.
