Observation: Rodent droppings (rat) found in the dry storage room (by sump pump area, entrance to lower room, and under the shelving in back corner) and one dropping noted in the front area kitchen.
Corrective Action(s): The premises must be free from pests. Contract licenced pest control, seal all spaces where rodents may enter, clean premises thoroughly to remove food/water sources, keep all items at least 6 inches up off of the floor, and monitor for pests.
All food must be in pest proof bins. Inspect items and if there are signs of rodent activity, discard food. Most food is in pest proof containers. Use wiping cloth soaked in chlorine sanitizing solution to sanitize cans, containers, and shelves.

Corrective Action(s): Thoroughly clean all shelves and floors. Defrost the small bread freezer as the lid cannot shut properly.

Comments

Dishwasher has a final chlorine sanitizing rinse. Dishes appear to be covered in soap after the final rinse (corrected during inspection).
Ensure that the dishwasher is rinsing properly and let dishes and utensils air dry to allow contact time with sanitizer.
Chlorine sanitizer is available in spray bottle.
Coolers are at 4 C or colder.
Hand washing sink has liquid soap and paper towels.
