302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Sanitizer bottle used to clean drink mixers contained approximately 50 ppm quaternary ammonium compound (quats) - below 200 ppm.
Corrective Action(s): The quats solution inside the sanitizer bottle was replaced and the drink mixers were re-sanitized at time of inspection. Ensure that the sanitizer bottles are routinely replaced with a fresh solution of quats (e.g. every 2 hours or as needed) to eliminate bacteria on the mixer.

Observation: Back area of food premise near stand-up freezer/refrigerator contains approximately 5-6 flies. Flies were "resting" on back wall and on the bottom of upper shelving
Corrective Action(s): Flies were removed at time of inspection. Ensure that doors and entranceways are kept closed, especially the drive-thru window when not in use. Collaborate with professional pest control company on further actions to mitigate fly activity.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Area underneath dry storage across from 3-compartment sink contains spilled black box with sugary residue. Ants observed feeding on the residue.
Corrective Action(s): The black box and ants were removed, and the area was thoroughly cleaned and mopped. Ensure that any sugary spills are cleaned immediately, as they can be an attractant for pests.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The lid of the dry storage container underneath the fly trap has cracked.
Corrective Action(s): The container was covered with seran wrap. Please replace the lid of the container to protect your dry storage materials against contamination / pests.

Comments

Routine inspection conducted. The following was observed:

1) Hygiene and Sanitizing
- Sanitizing compartment of 3-compartment sink contained approximately 200 ppm quaternary ammonium compound
- Handwash stations in serving area and back area were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizing dispenser above 3-compartment sink releases 200 ppm quats
- Employee observed properly handwashing before handling food
- Sanitizing pails on table and underneath cutting board contain 200 ppm quats and are switched every 2 hours
- Knives, ladles, cutting boards in sanitary condition

2) Temperatures (Max: 4C for coolers, -18C for freezers; Min: 60C for hot-holders)
- Prep-cooler and cooling wells at 4C
- Hot-holders for soups at 65C
- Stand-up refrigerator at 4C
- Stand-up freezer at -18C
- Thermometer present in cold-holding units

3) Storage
- All food items are elevated off the floor
- Ingredients inside freezers and refrigerator are organized into bins and food-grade bags

4) Pest Control
- Professional pest control company conducts routine audits. Last inspection conducted on March 1, 2018 - fly light (glue board) changed, snap traps deployed
- Snap traps and fly traps present as part of IPM program
- No signs of recent rodent activity at time of inspection

5) Administrative
- Manager has advanced FST (FoodSafe 1 equivalent)
- Supervisor has FoodSafe 1
- Temperature logs are up-to-date for hot-held and cold-held products - good
