Observation (CORRECTED DURING INSPECTION): Chicken thawed in a container of water at room temperature at 15C. Operator moved chicken into another container and put into the cooler when notified. Discussed the proper thawing methods with operator, who seemed to know them already.

Observation: Cluttering of items on the floor found at the bar and kitchen (dish trays, boxes of beer bottles, boxes of stuff, cluttering miscellaneous items. Food debris found on the floor in the bar and kitchen. A bag of potatoes and onions were found stored on the floor.
Corrective Action(s): Remove all items off the floor to allow to proper cleaning, control and monitoring of pests. Store items in food grade hard plastic bins at 6 inches above the floor.

-All counters, cabinets and shelves.
Corrective Action(s): Clean the above noted areas.

Observation: The following items require repair:
1. The cabinet where the hand sink was in the kitchen had broken parts and appeared water damage.
2. The handle for the faucet at the hand washing/prep sink was broken.
3. The faucet at the hand washing sink in the kitchen was wobbly and not secured to the counter.
Corrective Action(s): Repair or replace the items noted above.
