Observation (CORRECTED DURING INSPECTION): Rolls of paper towels found in storage underneath the hand sink at the bar that appeared uncleaned.
Corrective Action(s): Move the paper towels into a different storage area that is cleaned.
Correction date: immediately.

Observation (CORRECTED DURING INSPECTION): High temperature dishwasher did not meet sanitizing temperature requirement (71C at the plate). The gauge was reading 93C for rinse temperature but the measured temperature was 53C and 68C. Dishes and utensils were rewashed and temperature was 73C at the plate. Discussed with operator to always use a thermostrip to check the temperature at the plate and not rely on the temperature at the gauge. Operator to keep a log of the thermostrip tests.

Observation (CORRECTED DURING INSPECTION): The handwashing station at the bar did not have any liquid hand soap or paper towels at time of inspection. The hand wash station in the kitchen was blocked by storage of utensils. Both stations were provided with liquid hand soap and paper towels when notified.

Observation (CORRECTED DURING INSPECTION): Operator did not wash hands before touching the beef patty on the grill when he flipped it. Discussed that hands must be washed prior to handling foods.

Observation (CORRECTED DURING INSPECTION): Chicken thawed in a container of water at room temperature at 15C. Operator moved chicken into another container and put into the cooler when notified. Discussed the proper thawing methods with operator, who seemed to know them already.

Observation: Rodent droppings noted below the cooking grill area and on the floor near the cooking area.
Corrective Action(s): Remove rodent droppings and clean and sanitize the areas noted. Provide pest control reports.

Observation: Cluttering of items on the floor found at the bar and kitchen (dish trays, boxes of beer bottles, boxes of stuff, cluttering miscellaneous items. Food debris found on the floor in the bar and kitchen. A bag of potatoes and onions were found stored on the floor.
Corrective Action(s): Remove all items off the floor to allow to proper cleaning, control and monitoring of pests. Store items in food grade hard plastic bins at 6 inches above the floor.
Correction date: 3 days.

Observation: The areas below required cleaning:
-Floors underneath all appliances in the kitchen (grease and food debris found)
-Exhaust canopy had grease build-up
-The counters in the kitchen.
-The coolers' and freezer's doors, handles, bottom surface, gaskets.
-All counters, cabinets and shelves.
Corrective Action(s): Clean the above noted areas.

Observation: The following items require repair:
1. The cabinet where the hand sink was in the kitchen had broken parts and appeared water damage.
2. The handle for the faucet at the hand washing/prep sink was broken.
3. The faucet at the hand washing sink in the kitchen was wobbly and not secured to the counter.
Corrective Action(s): Repair or replace the items noted above.

Standing freezer at -15C
One standing cooler was not in operation
All coolers at the bar was = or <4C
Chest freezer at the bar was -18C (food were in frozen state)
-Bottle of chlorine sanitizer at 50ppm. Operator remixed at 100ppm.
-Hand sinks in bathroom had paper towels and liquid soap.
