Observation (CORRECTED DURING INSPECTION): Quats sanitizer spray bottle at bar measured at 0 ppm QUATS concentration with test strips. Staff prepared fresh solution during time of inspection which measured at 200 ppm QUATS concentration.
Corrective Action(s): Prepare fresh QUATS solution in spray bottles daily to ensure the concentration is maintained at 200 ppm to effectively sanitize food contact surfaces, equipment and utensils. Test the concentration strength with test strips (as per approved sanitation plan).

Routine Inspection Conducted

1. Temperatures:
- Walk-in coolers at 4'C or lower
- Line coolers at 4'C or lower
- Bar cooler at 4'C or lower
- All freezers at 4'C or lower
- All hot-holding units measured at 60'C or higher
- Temperature logs are maintained

2. Sanitation:
- General sanitation is good
- Hand washing stations supplied with hot and cold running water, liquid soap and paper towel
- Chemical dishwasher measured at 100 ppm chlorine residual with test strip
- QUATS sanitizer in sanitizer pails measured at 200 ppm QUATS concentration
- Glasswasher at bar measured at 12.5 ppm iodine concentration with test strip (strips available on site)
- Ice machine observed in sanitary condition
- Ventilation hood kept in good sanitary condition

3. Storage:
- All food stored protected, covered and at least 6 inches off the floor
- Dry storage area well kept - pest proof containers in use
- Raw meats stored away from ready-to-eat foods
- Chemicals stored away from food
- Adequate supply of clean uniforms available on site

4. Pests:
- No signs of pests during time of inspection
- Traps in place and pest control company is contracted
