Follow-up inspection conducted to the routine from December 19, 2019 (RPT#: 247034). The following was noted:
-Prep cooler has been adjusted and consistently maintains 1C (top) and 2C (bottom).
-Temperature logs present and up-to-dated.
-Shelf underneath dough presser has been painted with waterproof paint, including the sides.
-Platform under dough mixer has been painted.
-Hot-holding unit maintains ambient temperature of 70C. All pizza slices in unit were at greater than 60C internally.
-Pizza boxed elevated 6" off the floor.

You may now use the prep cooler to store potentially hazardous foods.
