Observation: Fruit flies observed throughout the premises (at front service area and in back preparation area). Operator mentioned that pest control company (Ecolab) is aware. Two UV traps are observed in place as well as a sticky fly trap.
Corrective Action(s): Operator to send past Ecolab report to verify services. Ensure premises is maintained in a clean and sanitary manner to prevent pest harbourage/breeding.

1. Temperatures:
- 2-door display cooler #1 at 3C
- 2-door display cooler #2 at 0C
- Undercounter 2-door cooler in front service area at 3C
- Undercounter 2 door cooler in cooking line at 3C
- Undercounter freezer drawers at -18C
- 3-door stainless steal stand-up freezer at -18C
- Hot-holding unit measured at >60C
- Thermometers available in cold holding units

2. Sanitation:
- General sanitation of premises is satisfactory
- Handwashing stations in front service area, cooking line, back prep area and staff washroom adequately supplied with soap, paper towel, hot and cold running water
- QUATS sanitizer spray bottle and sanitizer buckets measured at 200ppm QUATS concentration with test strip
- Chemical dishwasher chlorine residual (at plate surface) measured at 50 ppm with test strip
- 2-compartment sink available with drain plugs for manual warewashing
- Ventilation hood kept in sanitary condition

3. Storage:
- Meat slicer observed in sanitary condition
- All equipment observed in good condition and kept in sanitary manner
- Chemicals stored away from food
- All foods observed covered and stored at least 6 inches off the floor

4. Pests:
- Pest control company (Ecolab) contracted
