*Second Floor Servery: All food items are prepared in the first floor kitchen. Food taken to the second floor - stored/dispensed by cooks. (~ 30 Guests) Quick turnover. All unused food and soiled utensils are returned to the main kitchen for storage and cleaning/washing.

Facility consists of upright fridge, microwave, hand sink and steam table.

- Temperature Control: Fridge: 2.5 C (gauge noted) *Monitor regularly.
- Hot holding of perishable food items to be maintained at or above 60 C. *Monitor - adjust as required.
- Commercial dishwasher: As per main kitchen inspection comments.
- Wiping cloth storage discussed.
- Sanitary Facility: Ok.
- Staff Hygiene: Routine hand washing by all staff required. Glove use discussed.
- Pest Control: No signs noted. Monitoring required.
