Observation: 1. Grease and food debris accumulation behind grill area and dripping/pooling grease.
Last routine service date was Sept 2023 according to label.
2. Dry storage area - some fallen food and food packaging, food debris under the racks.
3. Pop lines in dry storage area have dripping brown liquids from ceiling down to tanks along the lines.
4. Servery area Quat Sanitizer in buckets is cloudy, 0ppm Quats. Needs changing.
Corrective Action(s): 1. Pull out equipment and thoroughly go over with degreaser. Remove all food debris accumulation.
2. Sweep underneath dry storage area.
3. Clean and sanitize lines. Check for leaks in lines.
4. Change buckets immediately (CDI).

Observation: 1. Cook prep area - wall behind a stainless steel counter has tile that goes down to the table but exposes ripped drywall/cardboard (not waterproof) underneath down to the floor level.
2. Back door has small crack on the seam side below the handle down to the floor.
Corrective Action(s): 1. Tile the rest or seal with waterproof, durable material that is easily cleanable.
2. Seal or repair the door to ensure this is pest proof.

Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation
-Separate staff storage area for personal items and clothing
o Staff washrooms appear clean and are fully supplied for hand hygiene
o Public washrooms are clean and fully supplied for hand hygiene

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o Hot holding food items are at 60C - soup, gravy, stews, etc.
-Mashed potatoes are at 30C in the warmer and are from a pre-made bagged paste - operators report this is following the food safety plan and is microwaved during prep to warm up

Food Processing and Food Protection
o Cooling - food items are batched and portioned into small bags, labelled.
o Food Storage - Food is stored in covered containers.
-Raw meats are stored on the lowest shelf
-Coolers are organized to prevent cross contamination

Maintenance and Sanitation
o Dishwasher - 50-100ppm Chlorine sanitizer
o Sanitizer buckets - have 200ppm Quats (400ppm measured)
o Storage of chemicals is separate and away from food
o Pest control - Operators have a pest control contractor in place and there are no signs of pests at the time of inspection.
-Pest control contractor invoice emailed to EHO.

Administration
o Valid operating permit is posted in public view
