G Manager is FS trained along with all other managers.
*Ensure to have at least one FS trained staff at each food prep area
- Hand-sinks stocked w/soap + paper towels
- Coolers </=4C; Freezers satisfactory.
- Dishwasher providing >/=50ppm chlorine
- Smart Power sanitizer (Dodecyldenzen Sulfonic Acid and Lactic acid) in proper concentration, test strip is present
- Overall sanitation of the establishment is ok
-pest control is servcing and reports are onsite ( reviewed)
-Temp log sheet is on site and up to date
-G M is up to date with FS knowledge

** Ensure FSP is up to date with any addition to the menu (Ie: scorpion burger) - double check on the expiry for fried onion
** Keep all dry goods and all soft packaged foods (in plastic or paper) in rodent proof containers/bin
