Observation (CORRECTED DURING INSPECTION): 1) Bleach surface sanitizer measured above 200ppm chlorine.
2) Sanitizer solution for warewashing was mixed with detergent.
Corrective Action(s): 1) Bleach surface sanitizer solution must be between 100-200ppm chlorine.
2) Do not mix bleach with detergent as this can reduce the effectiveness of bleach.

Observation (CORRECTED DURING INSPECTION): Frozen chicken breasts were thawing at room temperature. Operator took it out of the freezer less than 2 hours prior to time of inspection.
Corrective Action(s): Frozen foods must be thawed either under refrigeration or under cold running water.

Handwash station is fully supplied.
2 compartment sink for warewashing.
Bleach is available for sanitizing. See violation.
Coolers all measured 4C or colder.
Freezers all measured -18C or colder.
Temperature logs are maintained.
Proper cooling of cooked foods observed.
No concerns with food storage.
General sanitation is excellent. No signs of pests.
