Observation: Air bubbles still observed entering into the tubing where the zap strap is located joining the 2 tubes in the quat dispensing system at the 3 compartment sink
Corrective Action(s): Have technicain repair the dispensing tubing to eliminate air entering the tubing where the 2 tubes are joined as discussed with premises Manager.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Sanitizer concentration tested at approx 100 to 150ppm in the sanitizing sink. Air bubbles were observed entering the dispensing tube where the zip tie connector was located. Once tube was primed to eliminate any air in the tubing, the sink refilled and 3 pumps of quat sanitizer added, the concentration was tested at 200-300ppm.
Correction: Due to no documentation for daily testing of the concentration of quat sanitizer, all utensils will need to be resanitized.

Staff are filling out the documentation immediately after the pizza slices have been placed into the 1 hour hold unit.
