Observation (CORRECTED DURING INSPECTION): During review of manual dishwashing procedures, operator was not able to explain proper procedures.
Corrective Action(s): Ensure to follow the dishwashing poster posted on your wall above the triple-sink:
1) First sink must be filled with hot, soapy water for washing dirty dishes
2) Second sink must be used for rinsing dishes
3) Third sink must be filled with 100 ppm - 200 ppm bleach solution for sanitizing dishes (fully submerged for at least 30 seconds)
4) Do not rinse after the sanitizing step. Allow dishes to air-dry.

Observation (CORRECTED DURING INSPECTION): A garbage bag was used to cover dough in the walk-in cooler.
Corrective Action(s): Ensure to use only food-grade materials for food. Garbage bags may have chemicals that can potentially contaminate food.
Staff replaced garbage bag with saran wrap at time of inspection.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Operator has made the following changes to the kitchen layout:
- Moved location of the pizza prep cooler
- Added a new smaller prep cooler by the walk-in cooler and relocated the dry storage rack
- Replaced the 6-range stove and drawer-cooler unit with a 6-range stove without drawer coolers
- Dry storage rack has been relocated to the hallway
- A pony wall has been built in the front area
Corrective Action(s): Submit an updated floor plan drawing to reflect the current kitchen layout and equipment. Do not make any more changes.

Observation (CORRECTED DURING INSPECTION): No staff on duty had FoodSafe at the start of inspection.
Corrective Action(s): There must be at least one staff member with FoodSafe onsite at all times. Register more staff for FoodSafe.
Operator returned to facility by end of inspection.

Comments

- Hand washing sinks were properly supplied with hot/cold running water, liquid soap, and paper towels
- Quats sanitizer solution available in each area in labelled spray bottles at 200 ppm
- Triple-sink available for manual dishwashing. Ensure to follow the procedures on the poster (see violation code 302 above for details).
- Walk-in cooler measured at 3C.
- Upright freezer measured at -20C.
- Accurate thermometers available
*Both prep coolers and both sweets display coolers have not been in use yet and were not plugged in at time of inspection. Ensure coolers are at 4C or colder prior to using to store food.
- Mop sink area satisfactory
- Dry storage area satisfactory
**Reminder that the dishwashing room is to be used for dishwashing only. Absolutely no food preparation is permitted in this area. Microwave was removed from the dishwashing area at time of inspection.
- Reviewed cooling procedures. Do not cool hot food in large pots. Food must be portioned into small, shallow containers and rapidly cooled from 60C to 20C within 2 hours, then from 20C to 4C within the next 4 hours in the cooler. Use ice or ice wands if needed.
- Reminder that all equipment to be washed must fit into your triple-sink to be properly washed, rinsed, and sanitized.
