Observation:
- Bottom shelves of all freezers (walk-in, glass door, 2-door, etc.) require cleaning.
- Unsanitary knife and tools stored in chill area.
- Mould present on ceiling of larger walk-in cooler.
- Shelves of larger walk-in cooler have accumulation of grime.
- Large ball of mould growing in one of the chill area containers.
- Baffles of ventilation canopy have grease buildup.
Correction:
Clean all areas listed above. Ensure to properly sanitize all food contact surfaces and equipment.

Follow-up Inspection:
- The following areas have now been cleaned:
Bottom shelves and inside of all freezers.
Ceiling of large walk-in cooler.
Shelves of large walk-in cooler.
Inside of all chill area containers.
Baffles of ventilation canopy.
- All equipment stored in a sanitary condition.
- Both hot and cold water working properly at the 3-compartment sink for manual warewashing.
- All hand washing stations are accessible and free of obstruction.
- All food items covered and protected from contamination.
- "Kay" chemical dispensing unit has been fixed so there is no leaks or spraying.
- Light bulb cover placed on light bulb in small walk-in cooler.
- Ice machine clean and working properly. Ice scoop stored separately in a designated container.
- General sanitation of facility satisfactory.
