Observation (CORRECTED DURING INSPECTION): Hand wash station in the front bar area did not have paper towels in the dispenser.
Corrective Action(s): Ensure that hand wash stations have adequate supply of hot and cold running water, liquid soap and single use paper towels at all times. Staff re-stocked the paper towel dispenser at the time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Glass dishwasher in the bar area did not dispense iodine sanitizer even after multiple cycles.
Corrective Action(s): Ensure that glass dishwasher is maintained in working order and is able to dispense iodine at the recommended concentration between 12.5-25.0ppm. Repair/service the dishwasher. In the meantime, use the low temp mechanical dishwasher for washing glasses.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- Coolers were maintained at a temperature of 4C or less.
- Freezers were found between -6 to -18C.
Ice build up noted in stand-up freezer used for storing wings. Consider defrosting/service.
- Hot holding of grilled onions/gravy at 60C or above.
- Temperature logs were maintained and found satisfactory.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pail available throughout the facility and the concentration of lactic acid based sanitizer noted at ~1875ppm (satisfactory).
- Low temp mechanical dishwasher dispenses chlorine at a concentration of 50ppm. Test strips available and staff demonstrated the use of test strip at the time of inspection.
- 3 compartment dishwashing sink is also available.
- 2 comp prep sink maintained in good sanitary condition.
- Ice machine was found clean and the scoop was stored outside.
- Sanitizer logs were maintained and found up-to-date.

Storage:
- All food items were stored at least 6" off the floor.
- All products were found either in original packaging or covered inside coolers.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed in the kitchen area at the time of inspection. As new delivery came in on Monday, storage area was blocked and will be assessed for pest activity during follow-up inspection.
Few flies noticed in the corner of bar area and requires cleaning.
- Mechanical traps were present throughout the facility.
- Back screen door was properly sealed at the time of inspection.

Administrative:
- Staff has valid FoodSafe Level 1 certificate.
