Observation (CORRECTED DURING INSPECTION):
Open tin cans of condensed milk, coconut milk, and cream corn were found in the cooler. There was some rust forming on the tin cans which could contaminate food.
Corrective Action(s):
Transfer food out of tin cans and store it in food grade containers with tight fitting lids to prevent contamination. During the inspection, staff transferred the food into food grade containers.

Observation (CORRECTED DURING INSPECTION):
There is accumulated grease and dust on the exhaust canopy filters, and the service sticker indicates the exhaust canopy and filters were required to be professionally cleaned in December 2023. The accumulation of grease and dust is a fire hazard and it could contaminate food.
Corrective Action(s):
Immediately schedule the exhaust canopy and filters to be professionally cleaned. Ensure ALL exhaust filters are washed and sanitized on a weekly basis to remove grease and dust. During the inspection, the owner stated they have scheduled the exhaust canopy to be professionally cleaned this week.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 81.9C at the plate's surface, as per max/min thermometer.
- Bleach sanitizer in spray bottles had [Cl2] of 200ppm.
- Foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins below RTE foods; and foods stored 6" off the floor on shelves.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- No signs of pests.
- All surfaces are in good working order.
- Valid, FoodSafe certified staff present.

ACTION
Transfer food out of open tin cans into food grade containers, to prevent food from being contaminated by rust.
Schedule the exhaust canopy and filters to be professionally cleaned and serviced this month.
Ensure exhaust filters are cleaned on a regular basis (weekly) to remove grease and dust.
