Routine Check:
-Coolers (walk-in, 2 prep, salad display) are at 4C/40F or colder. - good.
-No hot holding today. Pizza slices are discarded after 2 hours when temperature of food is between 4-60C (40C - 140F) - Ok.
-Coolers have thermometers - good.
-Hand sinks (2 + staff washroom sink) have hot/cold water, liquid soap and paper towels in dispensers - goo.
-Quats is dispensed at about 300ppm - check label.
****Tongs are sanitized with quats sanitizer - air dry and follow directions on label OR use cold water and put through dishwasher every 4 hours. Separate tongs us used to avoid cross contamination.
-Commercial dishwasher final sanitizing rise satisfactory (50+ppm chlorine).
