Observation (CORRECTED DURING INSPECTION): Observed 1DR prep cooler housing raw fish and poulty holding foods at 14C. Unit had been unplugged for repair and not plugged back in.
Corrective Action(s): All product discarded at time of inspection. Be sure to check a cooler has returned to 4C prior to use after repair.

Observation: The following require cleaning and sanitizing as cleanliness is not satisfactory:

2. Hand washing sink by mop sink - ensure it is ONLY used for hand washing, no food debris
3. Steel dish rack requires a thorough cleaning and sanitizing. Provide a barrier between dishes and garbage can
4. 3-tier rolling racks
5. Prep coolers - seals, hinges, and interior
6. Inbetween, under and behind all cooking equipment
- especially behind deep fryers, combi oven, gap between grills and drawer coolers
7. Dishwashing area + dishwasher, especially at stainless steel walls and underneath dishwasher.

Comments

Observed ice build-up in walk-in freezer, looks like seal may not be providing a tight seal which can lead to build up. Have unit looked at to ensure seal is intact and to identify the cause of the ice buildup

Hand washing sinks equipped with liquid soap, paper towel and hot/cold water. Bar sink was missing a soap dispenser, replaced at time of inspection
Sanitizer available at the kitchen and bar
All other temperatures meet health requirements
Thermometers observed in coolers
General food storage practices in coolers were satisfactory
Temperature logs maintained and probe thermometer provided
