304 - Premises not free of pests [s. 26(a)] Observation: Rodent activity still noted in kitchen area. Activity most noted below and behind skillet counter and other counter along back wall. Difficult to determine how much or how recent the rodent activity might be given the weak clean up procedures in place in this area. Cleaning staff must do a better job of cleaning in corners, behind legs of counters and electrical cords on a more regular basis. Consider as part of regular cycle (bi-weekly?) moving equipment to access corners and hard to reach areas. Also, obtain/use shop vac of vacuum as a tool to remove food debris from corners of kitchen. If droppings continue in kitchen area, get PCO to place more sticky traps to help eliminate rodent activity in kitchen area. Corrective Action(s): Violation Score: 9

Continue to get buy in from cleaning staff to eliminate residual food debris on floor of kitchen area on daily basis. Try to implement a more regular full cleaning of floor in kitchen to address build up in corners and behind legs of equipment. Operator is continuing to look for and block off rodent access points to the kitchen. Keep this up.
