Observation (CORRECTED DURING INSPECTION): 1)A small insert filled with tempura beans was sitting on the counter behind the sushi bar, internal temoerature was 21 degrees Celsius. Discarded.
2) A small insert full of barbecued salmon skin (approximately 3 lb) was sitting in front of the grill; 25.9 degrees Celsius internal temperature. Discarded.

Potentially hazardous foods such as cooked vegetables and salmon skin MUST be kept out of the danger zone of 4 degrees Celsius to 60 degrees Celsius. Use a hot holding unit for these items or keep them in the fridge. This infraction has been noted numerous times and progressive enforcement such as violation tickets will be used if this violation is noted again.

Observation (CORRECTED DURING INSPECTION): Cleaning cloths at the sushi bar had no trace of bleach. Keep cleaning cloths saturated with bleach at all times. This infraction has been noted multiple times. Failure to keep cleaning cloths saturated with sanitizer will result in the issuance of violation tickets.
