Observation (CORRECTED DURING INSPECTION): Yogurt, cooked onions, and lassi internal food product temperatures ~6-7 degrees C in inserts at the preparation cooler. Chana masala stored in lower section internal food product temperature ~ 6 degrees C. These products have been stored in the preparation cooler since previous night.
Corrective Action(s): Discarded above items. Ensure all cold potentially hazardous foods are stored at or below 4 degrees C at all times.

Chana masala stored in lower section internal food product temperature ~ 6 degrees C. Ambient air temperature of preparation cooler lower section observed to be ~ 6-8 degrees C. Operator's accurate indicating thermometer read 6 degrees C.
Corrective Action(s): Service the preparation cooler with inserts. Ensure unit is capable of maintaining 4 degrees C or less. Correct immediately.

200ppm quats (ready to use) available for use in labeled spray bottles.
100ppm bleach available for use in container. Wiping cloth stored in solution when not in use.
Dishwasher registers 50ppm chlorine during the final rinse cycle.
Walk in cooler at 4 degrees C.
2 door freezer at -16 degrees C.
Preparation cooler at this time not used to stored any cold potentially hazardous foods.
Temperature monitoring records maintained and available for review for walk in cooler and 2 door freezer. Reminder to monitor and record temperature of the preparation cooler.
