Observation: Chest freezer and stand up freezer had thick ice build up. Operator stated that defrosting was done 3 months ago.
Corrective Action(s): Please service/defrost the freezers to ensure adequate circulation of cold air within the freezers and to maintain temperature below -18C.

Comments

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Temperature of front prep cooler fluctuates but ranges between 4C to 6C. Probed multiple inserts and internal temperature recorded at or below 4C.
- Walk in cooler recorded at 2C
- Freezers noted at -8C and -15C.
- Hot holding units at 60C or above
- Beef and chicken donair recorded above 100C on the vertical spit and was being cooked during inspection

Note: Please cover the inserts when the front prep cooler is not in use.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of bleach noted at 200ppm.
- 3 compartment sink used for manual dishwashing.
- Utensils and tongs were found in sanitary condition.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate (Exp September 24, 2025).
