Observation (CORRECTED DURING INSPECTION): Cook line sanitizer bucket and prep area sanitizer bucket both measured 0ppm for Quat Sanitizer.
Corrective Action: Quat Sanitizer should have a concentration of 200ppm to properly sanitize food contact surfaces to prevent pathogen growth and toxin production
New buckets of sanitizer solution were prepared at time of inspection and measured at 200ppm.

Observation (CORRECTED DURING INSPECTION): (1) Dipping chocolate for cones was uncovered, near a handwashing station at time of inspection (Hot-holding chocolate unit)
Corrective Action: Food itmes need to be covered and not stroed underneath / nearby handwashing stations to protect against contamination. Move hot holding unit to different location
Chocolate was covered at time of inspection

(2) Frozen raw beef patties in boxes were stored above frozen boxes of cakes/desserts in walk-in freezer
Corrective Action: Raw meat must be stored below ready to eat items to prevent contamination

Observation: (1)Fan debris / dust in freezer (walkin) observed at time of inspection
Corrective Action: Freezer/Fridge walkins must be free of debris to prevent contamination of food items

(2) Visible debris build-up behind ice cream machines and underneath prep areas.
Corrective Action: Ensure regular cleaning is occuring in these areas to maintain sanitary conditions of the premises and to not provide sources for pests.
